Star Anise, scientifically known as Illicium Verum, is a spice that is widely sought after for its distinct aniseed flavour, and its visually appealing, star-shaped form. Native to China and Vietnam, Star Anise is a staple in these Asian cuisines, and is also a key component in the Indian spice mix, garam masala.

The spice is roughly an inch in size with eight pointed star-shaped pericarps that are hard and dark brown in color. Each pericarp houses a small, shiny amber-colored seed. It is harvested just before ripening, and then dried in the sun.
