Homemade Burger Patties

- Grind and measure each ingredient separately.
- In a medium bowl, combine the beef short rib, beef chuck, and beef brisket together with your hands being careful to not overwork it.
- Once combined, slowly add and combine the beef fat again being careful not to overmix it.
- Divide into 4 equal sized portions. Roll each portion into a ball with your hands and press down gently to form a patty.
- Ideally, cover and refrigerate overnight to allow patty to bind and prevent it from falling apart while cooking.
