  1. Grind and measure each ingredient separately.
  2. In a medium bowl, combine the beef short rib, beef chuck, and beef brisket together with your hands being careful to not overwork it.
  3. Once combined, slowly add and combine the beef fat again being careful not to overmix it.
  4. Divide into 4 equal sized portions. Roll each portion into a ball with your hands and press down gently to form a patty.
  5. Ideally, cover and refrigerate overnight to allow patty to bind and prevent it from falling apart while cooking.
