Jason's Must-have Pumpkin Pie
Every Thanksgiving and Christmas, mom would prepare two pies the day before to enjoy with the holiday family meal: Pumpkin and Apple. I am pretty sure my older brother Jason would refuse to come to dinner if mom did not prepare her pumpkin pie for him. Simple yet flavorful, this pie is a great addition to end that holiday meal. Of course, usually followed with a dollop of Cool Whip to help it go down!

- Preheat oven to 425°F.
- In order, mix pumpkin purée, brown sugar, ground cinnamon, ground ginger, salt, eggs, milk, and evaporated milk in a medium bowl.
- Line 9 inch deep pie dish with pie crust and fill with the pumpkin mixture.
- Bake for 15 minutes and then reduce heat to 350°F.
- Continue baking for 45 - 50 minutes more, until a clean knife inserted in the middle comes out clean.
- Remove and allow to cool before serve with a dollop of Cool Whip.
