Simple Slow Cooker Lengua

Lengua, or beef tongue, might not sound like the most appetizing meat, but trust me when it comes to a tender and flavorful dish. Perfect for tacos or the like.

  1. Place lengua, sliced onion, garlic, and bay leaf in a slower cooker. Season generously with salt.
  2. Cover with water and cook on low for 8 hours.
  3. Transfer lengua to a cutting board and cool enough to handle by hand.
  4. Peel outer layer of skin from lengua and remove rough end.
  5. Chop and/or shred meat into bite-sized pieces.
  6. Heat and melt butter in a medium skillet over medium heat.
  7. Add meat, season with salt and pepper to taste, and cook for 10 minutes, stirring occasionally.
