Croque Madame Pizza
The classic French croque madame sandwich is a lesson in extravagance, made with white bread, butter, cheese, ham, béchamel sauce, and a fried egg. It's a luxurious, deeply comforting dish. This take on the classic turns it into a pizza that will not disapoint.

- Preheat the oven to 450ºF with a pizza stone to heat.
- In a small saucepan, melt the salted butter over medium heat. Add the flour and whisk for 1 minute.
- Slowly add the whole milk and dijon mustard, whisking continuously. Bring to a simmer and season with kosher salt and crushed black pepper.
- Cook for 1 to 2 minutes, then remove the pan from the heat. This will make the béchamel sauce for the pizza.
- Dust a lightly floured surface. Roll the pizza dough out into a very thin roughly 12-inch circle.
- Spread the béchamel sauce over the dough. Sprinkle evenly with the Gruyère and fontina. Add the prosciutto, leaving space for the eggs. Sprinkle with the Parmesan.
- Take the pizza stone out of the oven. Using a large transfer surface (e.g., a cutting board) carefully slide the pizza onto the pizza stone.
- Sprinkle with the Parmesan-Reggiano and place in the oven to bake for 5 minutes.
- Remove the pizza from the oven and crack the whole eggs on top of the pizza.
- Set back in the oven and for 10 minutes more, or until the cheese is melted and the eggs are just set.
- Remove from oven and sprinkle with arugula, crushed red pepper flakes, ground black pepper, and chives.
- Slice with a pizza cutter and serve.
