Perfect for a cool fall day or Sunday football. This chili recipe balances the right amount of heat and seasoning for a dish you will keep going back for more.

  1. Preheat the oven to 275°F.
  2. In a medium bowl, use your hands to mix ground beef, 2 tablespoons of water, salt, and baking soda until combined. Let stand for 20 minutes at room temperature.
  3. Place a Dutch oven or large-heavy pot over medium-high heat. Add torn dried ancho chiles and toast, stirring frequently to prevent burning, until fragrant (about 5 minutes).
  4. Remove from heat and allow to cool.
  5. Add toasted ancho chiles pieces, crushed tortilla chips, ground cumin, paprika, garlic powder, ground coriander, dried oregano, dried thyme, and ground black pepper to a food processor and process for 2 minutes until finely ground.
  6. Transfer spice mix to a bowl.
  7. Add whole peeled tomatoes and associated liquid to the food processor and process for about 30 seconds until smooth.
  8. Return pot to the stove over medium-high heat and heat the vegetable oil.
  9. Add chopped yellow onion and cook, stirring occasionally for 4 to 6 minutes until softened.
  10. Add minced garlic and cook for an additional minute.
  11. Add ground beef using a wooden spoon to break meat up into ¼-inch pieces. Cook 12 to 14 minutes until beef is browned.
  12. Add spice mixture and minced chipotle chiles in adobo sauce and cook an additional 2 minutes stirring frequently.
  13. Add 2 cups of water, pinto beans and associated liquid, white sugar, and tomatoes. Bring to a boil and use a wooden spoon to scrape the bottom of the pot to mix in browned bits.
  14. Cover and transfer to the oven. Cook for 2 hours, stirring occasionally.
  15. Remove from oven and let stand, uncovered, for 10 minutes. Add apple cider vinegar and any additional salt and ground black pepper to taste. Stir to combine.
  16. Serve with lime wedges, chopped cilantro, chopped red onion, diced avocado, a dollop of sour cream, shredded Monterey Jack cheese, and tortilla chips.
